…It isn’t the supply chain or manufacturing

Imagine an out-of-control cruise ship bearing down on the sunny Island resort dock at 30-knots full speed with no captain at the wheel. 200,000 tons of steel coming in hard to shore, kicking up a gigantic spray of water behind it. There you are at the coffee shop in front of the pier, enjoying your latte while waiting for the ship to arrive. You watch in horror as this gigantic floating hotel with 4,000 souls aboard is barreling right for you, the bow getting taller and taller in the closing moments. You freeze – unable to move as the disastrous, tragic end draws near – paralyzed by _________.

The word is fear.

You didn’t see it earlier, but painted on the bow in bright green, it’s the USS Climate Chaos coming in hot …literally.

Sustainability at one time was more leisurely focused on clean energy use and efforts to improve, say, recycling and clean energy from the manufacturing plant to customer warehouses. The annual report would recite the efficiencies and efforts made to use less fossil fuels in the daily routine of manufacturing, shipping and commerce.

But wait; more recently we learn that greenhouse gas levels, despite the economic shutdown caused by the pandemic, have reached their highest concentration in 4 million years and shows no signs of slowing down. The planet is rapidly warming. Climate impacts start to get closer and closer to home through unrelenting wildfires, droughts, super-storms and wild weather shifts. You can feel it and see it now.

Then as if on cue, along comes a series of reports that reveal the incredibly significant relationship our food system has to climate impact, now the second leading contributor of global greenhouse gas production at 24%. Consumers who are already increasingly aware and sensitized to big societal issues like climate trouble, begin to realize there is a relationship between their food choices and climate outcomes.

The word sustainability acquires new gravitas and deeper meaning as it is redefined to signal climate threat from supply chain actors like livestock production and soil-damaging industrial agriculture practices.

  • Who knew it took 1,600 gallons of water, massive land resources and two years to produce one 16-ounce steak?
  • Why didn’t we know before that the world’s largest carbon sink, the Amazon rainforest, is disappearing at the rate of an acre per second due to repurposing the forested land for animal agriculture and crops to feed them?

Sustainability may now be the most popular term in modern marketing

Yet it is still vastly underserved as companies wrestle with its deeper meaning and implications. Will we get to solutions soon enough to prevent portions of the planet from becoming uninhabitable? Or will the streets of Toronto begin to resemble Beverly Hills with giant royal palm trees lining the Yorktown shopping district, while the southern hemisphere reels from millions of climate refugees running north for survival?

  • Sustainability is an operational imperative that starts at the field or ranch and works its way forward to the retail store. The challenge ahead begins with understanding what an organization’s carbon footprint looks like though objective, data-driven scientific analysis that runs all the way back through the supply chain and forward through manufacturing, distributing and recovery of packaging materials.

Within this analysis comes visibility to the conditions that impact climate threat contributions and identifying where improvements can be made, and carbon mitigation targets set.

The biggest threat to progress here is various forms of organizational fear

Given the speed at which climate threat is turning into a passion point for consumers on the path to a purchase decision, there is a need to get this right sooner rather than later. Yet some companies still struggle to navigate.

Why?

Fear of change

Change is hard. No one likes it except the most progressive leaders who see it as a path to reinvention and growth. Changing institutionalized thinking and processes is difficult. But change it must. We need a wildfire of movement towards credible sustainability solutions.

Fear of risk

The street looks for quarterly reports that repeat positive progress. Companies may worry that fundamental changes in infrastructure and operational standards will be a risk – that even with disciplined planning, to some degree, – they’ll still be steering in uncharted waters. Yes, but it’s a necessary risk worth taking.

Fear of truth

Every business resides in a glass house these days because anything that can be known, will be known. Are there some policies and behaviors that under scrutiny in the light of day could cause a little unease?

Transparency is demanded by users and stakeholders at a time when missteps can be discovered and reported globally in the digital age of communication. You already own that problem. The larger social responsibility demerit is knowing the problems exist yet doing nothing to improve them.

A spoonful of sugar helps the medicine…

Thinking differently – turns out robust sustainability commitments and policy are actually a path to improved innovation, financial outcomes and business growth.

Overwhelming evidence points to business growth from progressive sustainability programs, properly communicated to all relevant stakeholders. How can this be true?

Because the number of consumers who care about sustainability investments, programs and verified outcomes is NOT some small tertiary cohort. According to BXG:

  • 34% of consumers are deeply passionate about sustainability progress, and
  • another 33% are “concerned” about sustainability policies and behaviors.
  • That’s 67 percent of your consuming marketplace.

If consumers want it, you need to deliver, right?

In a sentence: sustainability is good for business.

It may require changes in how the company operates, sources and manufacturers, but these changes are necessary when the great ship Climate Chaos is coming in all gas and no brakes to ultimately reward the climate caretakers and punish the deniers who claim they didn’t see it coming.

Is this going to be expensive for our economy?

Not if the thesis set out by think tank RethinkX is correct. They forecast ambitious but realistic targets for change in the next 10 years, based on deployment of technologies we already have in place, such as precision fermentation in food making. They state:

“By leveraging the power of market forces, mitigation of greenhouse gas emissions can be transformed from a costly expense into a lucrative investment at every scale from local to global. Regions, nations, communities, cities, businesses, and investors choosing to embrace and lead the disruptions rather than resist them will reap enormous economic and social rewards as well as environmental benefits.”

Decarbonizing the global economy will not be costly, it will instead save trillions of dollars…

What happens when the consumer moves on and the brand doesn’t.

The pace of change these days is unsettlingly quick. Pandemic-authored forms of disruption have come hard and fast, supplemented by equally measured swings in consumer behavior, priorities and preferences. The world around us is evolving. Needs are changing. Attitudes and interests are getting a makeover. The pace of marketplace shifts is accelerating.

  • We’ve entered an entirely new era of marketing challenges where consumers move more quickly than brands. This creates fractures in relevance and perceived value as businesses remain anchored to a legacy business model or said more simply, “how we’ve always done it.’

When the consumer’s wants and needs move to another location on the relevance chess board and the brand doesn’t move with them, what happens when the business suddenly finds itself at odds with its user base?

Changes now upon us –

  • Modern food culture has gained new levels of sophistication.
  • What food is and where it comes from is headed towards a bioengineered future.
  • Health and wellness needs are now dominant preference considerations.
  • Sustainability concerns have morphed to focus on climate impacts.
  • Shopping patterns and behaviors are now linked to extraordinary experiences.
  • Safety and security are simmering underneath a cauldron of uncertainty.
  • Brand trust deficits compound while also multiplying perceived risks on the path to purchase.

Challenges that result –

  • Your product portfolio hasn’t advanced to match the consumer’s evolving quality definition and expectation.
  • You’re not looking hard enough at innovation driven by climate outcomes and requiring advanced bioengineering.
  • Your products are not fully in sync with health and wellness lifestyle goals.
  • You are still narrowly focused on clean energy as the platform for sustainability solutions.
  • There’s nothing remarkable and entertaining about shopping your store.
  • You haven’t answered the bellwether safety and security issues swaying your users.
  • You haven’t placed trust creation at the core of your strategic marketing plan.

New brands are stepping into the gap

Where there’s a lingering need, others will step in to fulfill it. The world is ripe for entrepreneurs who wish to serve these evolving needs creating a business environment founded on new definitions of what scale is; value propositions that re-write the rule book on average cost of goods; and what people will pay for entirely new and higher standards of quality. Brand narratives are moving to focus on purpose and values while historic brand stories remain tethered to feature/benefit selling.

When people change, if you don’t change with them, you’re in trouble.

This summer I attended a backyard community barbecue where the entire menu was a trip into Korean culinary culture. It was mesmerizingly good, a welcome departure from hot dogs and burgers, and an eyeopener on flavor interplay between sweet (sauce) and sour (kimchi). The novel ingredients were off the charts delicious and created a learning moment.

The lesson: once people have experiences that alter their world order and concept of what’s important, tastes good or matters to their sense of values and beliefs, it’s nearly impossible to go back to the old behavioral patterns.

Food culture refinement is fueling change

You just know expectations on what great food is like are shifting when more sophisticated menus and unique global taste experiences start showing up at the corner neighborhood bar – gastropubs are getting Michelin stars!! We are awash in cooking competitions, chef authored packaged artisanal foods, fancy meal kits, and preoccupation with fresh local food ingredients that require preparation skills.

As people acquire knowledge and experience, perceptions shift. The lowly Brussel sprout, and veggies generally, enjoy a renaissance as cheffy preparations take this mini-cabbage (same species of plant – the brassica oleracea) sulphur bomb to new heights of flavor transformation with cured meat and high temp roasting to caramelize the leafy exterior. Cooking techniques magically alter a one-time musty vegetal eating experience with deeper umami flavors.  

The American palate is maturing alongside growing enthusiasm for more complex and layered food preparations and menus. Are food brands right there with them helping share the future of food, or mired in a legacy infrastructure of ultra-processed preparations that lean too heavily on fat, sugar and sodium to drive their appeal?

While popping open a bag of potato chips is still a common snack time ritual, people making their own chips from scratch isn’t out of the realm of possibility either. Food culture in America is rapidly evolving with raised expectations for tastes, flavor profiles and gustatory adventures.

When food experience is driven by ingredients

The basic legacy concept behind packaged food solutions is convenience, an effort to reduce or remove preparation from the equation. But what happens when millions of consumers get a taste of the very flavor layering techniques that make chefs the culinary superstars that they are? Lockdowns helped push people to their stoves. It’s hard to go back to standard boxed mac and cheese when you’ve enjoyed the outcome of informed cooking mixing a béchamel sauce with aged gouda and lardons to envelop an elbow noodle in indulgent magic.

It’s even harder to dismiss these developments when observing 12-year-old kids on FoodTV’s “Chopped Junior” show whip out a wine reduction sauce for pan roasted halibut in under five minutes? Suddenly an otherwise neutral, bland tasting fish rises to a new position in flavor town at the hands of a tween. Does this not signal a change in how we see food ideas, expectations on preparations, romance around the possibilities of better food experiences?

Ingredients take center stage in menus. Packaged products with reimagined ingredients not slavishly tied to what’s cheapest have this incredible competitive advantage of being able to tell their product creation story proudly. This is happening at a time when that’s exactly the kind of behind-the-curtain tale consumers want to know.

How to disrupt yourself

One sure-fire way to guide innovation, restaging, re-purposing and reimagining what your brand is on earth to accomplish – is putting the consumer at the center of your strategic planning and product development strategies.

  • This is harder to do than it sounds because businesses often reflexively sit in service of their legacy brick and mortar infrastructure, supply chain traditions and sensibilities around average retail pricing.

When the consumer is willing to pay more for demonstrable upgrades in quality, where is that coming from? It is the very knowledge they’ve acquired through elevated food experiences where they learn about the relationship between better ingredients and better taste – and often healthier food outcomes to boot. The added spend equals sufficient added value.

Every food and beverage brand should be led by food culture anthropologists, scanning for the sea changes at a time when shifts are occurring more rapidly. We’ve reached a point where the consumer will inevitably move on while the brand plays catch-up or suffers relevance declines.

  • When values change and the consumer wants unique, customized higher quality food experiences, you don’t want to find yourself at odds where you end up fighting them to stay put. Sure enough, a new brand will hit the radar to answer their call for quality innovation.

International survey confirms path to brand preference decision

Where should you place your bets for growth? Is it optimal product technology or top-of-mind brand awareness? While these issues remain important, they are not the number one driver of brand choice and preference according to a recent Ipsos study of 8,000 consumers in the U.S., UK, France and Germany. Read on for the reveal.

The study exposes a significant strategic weakness

The Ipsos report laid bare a decided absence of customer-centrism in how businesses operate. For all the sermonizing about the importance of consumers to brands and business growth, it is interesting that so few know the real details of their customer’s lifestyle needs, wants, aspirations and behaviors. This insight is required to build deeper brand relevance and personalization, two components of optimal strategy that surfaced from the survey conclusions.

It appears that CPG businesses, especially legacy brands, are constructed primarily around a focused model that is systemically preoccupied with product development, operations, manufacturing, distribution infrastructure, supply chain, sales/marketing and cost management of same. Appears it may be tough for an older dog to learn new tricks.

  • “Customer first” is a relatively new trend in business management, seen more often in digitally-native brands where the entire proposition was invented on the back of laser-focused consumer relevance and ongoing interactive conversation and experimentation.

Further it is more difficult for marketing to connect and engage without heartbeat-level insight into those you wish to sell to – their lives and lifestyles. Relevance in brand communication is nourished by an uncanny sense of what matters to the user’s personal aspirations and needs. “You get me” and “you help me to ________” are ultimately more important in consumer-brand relationship construction than an awesome product, which is now table-stakes on the list of consumer expectations.

Here’s where to invest if sustainable growth is a priority for you and your organization:

The survey confirmed customer experience is the number one motivator of brand selection!

  • 77% of consumers choose a brand based on positive experience.
  • 64% will avoid a brand based on a bad experience.
  • Women (66%), Millennials (70%) and GenZ (68%) are most likely to head for the exits after a bad experience.

In fact, brand switching starts to gain traction after just one bad experience. Moreover, negative experiences and unresolved issues are also catalysts for dissatisfied word-of-mouth and social channel sharing.

  • Interestingly, the fastest growing consumer cohort now is 55+ and also the most ignored, given historic brand preoccupation with wooing younger audiences. That’s leaving big business on the table!

Here’s some added texture on the survey findings

  • Consumers do research ahead of a purchase, so anticipation is higher right out of the gate.
  • They expect to receive a seamless, friction-free and positive experience with your brand.
  • Brand recognition and stellar product technology is important but not the decider.
  • Customer experience is the tipping point on brand selection decisions.
  • Failure to understand customer needs is the critical, pivotal Achilles’ heel.

U.S. consumers, especially, are looking for personalization and real-time responsiveness on their questions including chat options with a live agent not a bot. In fact, more than 40% of consumers want personalized solutions based on a granular understanding of their interests, buying behaviors, demographics and psychographics.

Retail everywhere

The study demonstrates the incredibly important opportunity brands have to add value at all touchpoints along the path to purchase, whether online or at the store. For consumers, the channel is irrelevant with respect to expectations. They believe it should be friction free, simple and helpful no matter where they purchase.

  • What’s often missing is an embedded view that customer needs and wants come first rather than the company serving its own operational quirks or self-protective policies.

With consumer /user experience being a pivotal moment on the path to purchase and repurchase, it only stands to reason it must be served with skill and intuitive judgment on addressing the customer’s wants. Thus ongoing, always-on investment in consumer insight is a required commitment to make all of this work successfully for sustainable brand growth.

How you can improve consumer care and communication

In recent days the new Administration has brought greater transparency and clarity to the state of all things Pandemic. We’ve learned about more contagious strain variants, and non-optimal vaccine availability, and the real “final mile” logistical challenges of “getting vaccines into arms.” And just like the proverbial frog in the ever-increasing boiling pot of water, we’ve been reminded that although we’ve adapted to pandemic conditions over the last several months – we are still very much in a state of “national emergency” – a condition which “wasn’t created overnight and won’t be solved overnight.”

And so here we are.

At a new starting block.

Together – with more road to travel.

With these new revelations, people (read: consumers) are still caught betwixt and between the very human push toward any-kind-of-normalcy-now-please and pulling back to be pragmatic and practical in protecting themselves and their loved ones.

This juxtaposition brings ongoing challenges to brand communications for the foreseeable future.

  • Can we (finally) move off of Pandemic-related communication and get back to “normal”?
  • How can we best engage in the context of current consumer sentiment?
  • Do we need to reassess how we’re balancing our messaging and tone?

Pushing too hard toward normalcy now with block-and-tackle promotional messages (not something Emergent recommends anyway) – at best, may be perceived as out of touch – at worst, tone deaf. (Be ready for those social media keyboard vigilantes who will point that out to you and your followers.)

If ever there was a time to take the ol’ axiom “meet people where they are” to heart – the time is now.

As any regular reader of our Emerging Trends Report can attest, we assert that consumers are people first – emotion-driven, emotion-based – replete with hopes, dreams, fears and sometimes conflicted and complicated lives. Like now.

Reaching them today – being relevant and meaningful to them – requires less marketing genius and more real-life empathy and humanity.

While it’s true that the Pandemic has impacted communities and individuals differently, the overall shared experience has revealed five universal themes that more effectively address consumer sentiment and relevance, and are considerations when approaching communication strategies, tone and messaging in the coming months.

Consider these Five C’s of Ongoing Pandemic Brand Communications.

Compassion

Let’s talk tone as it undergirds everything to follow and is the basis of really connecting to our collective experience.

Though some of us have been merely inconvenienced during the Pandemic, others have suffered devastating generational losses – of loved ones – of livelihoods – of places to call home. Others still, are angry about life-momentum interrupted or golden years robbed of time spent with family, friends and grandchildren. Many are and will be struggling to get back on track emotionally and financially.  None of us are totally un-affected. As such “happy talk” messaging may fall on deaf ears.

  • How can your messaging and tone demonstrate a little compassion?
    • Like a good neighbor, have you just checked in with your followers on social with, “How are you doing today?” and then offered words of encouragement?
    • Are you sharing with your community how you’ve been helping and are continuing to help during this crisis – and in a way which is less about corporate philanthropy and more about doing your part

Comfort

Recently, we’ve all heard “it’s going to get worse before it gets better.” While, thankfully, the survival-panic demonstrated by The Great Toilet Paper Run of 2020 has leveled out, the idea of comfort – being comfortable – feeling comforted – remains. For some, the idea of getting back to normal is comforting (albeit not immediately completely realistic). Some in the early goings ensured their more indulgent comfort foods were well stocked to help weather the storm. Others still are finding new definitions of comfort in completing “pandemic projects” – many of those in the context of improved health & wellness.  This type of comfort is borne more from achieving peace of mind through boosting immunity and shoring up any perceived health deficits making them more susceptible to illness.

We’re reminded, though, that we’re still in uncertain times. Uncertainty portends dis-comfort. While not as acute as in March for some, the idea of comfort is still sought after by most.

  • How are you telegraphing and expressing the concept of comfort in your communications tone and messaging?
    • Can you craft messages in ways to offer reassurance, consistency and perseverance?

Confidence

The aforementioned uncertainty, the evolving information now being revealed about the Pandemic, and even the elements around the state of our Union have manifested if not in a crisis of confidence – at least a solid pressure-testing of it. As we eventually return to normal life, returning to work or school – enjoying a dine-in restaurant meal – for some, even just getting out of the house – all will require stretching a confidence muscle many haven’t tapped in months. To them this will feel foreign and unsettling as they try to regain their sea legs. Important to note here, that our collective emergence will not happen with a flip of a switch but rather in a slow roll-out – first among those duly vaccinated or as geographic restrictions are lifted. People informed by their various degrees of pandemic impact, personal assessments of their healthfulness and states of mental fortitude will be re-entering at a personal pace.

  • How can your messaging help inspire greater personal confidence?

Connection (and Re-Connection)

Much has been written about ongoing isolation whether self-imposed or otherwise. Plenty of people are still hunkered down or limiting external exposure to protect themselves and those in their homes.  As virtual connection has filled a void, anticipating eventual en masse in-person re-connecting brings much anxiety and complexity for consumers to process and manage. Even with vaccinations administered or others over their illnesses and boasting antibodies, the same public health measures of mask wearing and physical distancing are advised for the long term. That’s tricky – especially as more virulent strains emerge and current vaccines are evaluated against them, and questions abound about how long vaccines and antibodies may offer effective protection. 

Safely re-connecting won’t be like those sun-on-your-face, mask-free, personal-space invading “before times.”

The promise of eventual re-connecting is joyous.

The realities of re-connecting are, well, complicated.

  • Are there ways you can help simplify or otherwise support the idea of safely reconnecting?

Convenience

The Pandemic fueled contact-free convenience expectations among consumers. We’ve become (more) accustomed and maybe even dependent upon online ordering, curbside pick-up, drive-thru prepared meal take-out – even burgeoning auto-replenishment and subscription-based services. It is a new day.  While some may long for the leisurely visit to the grocery or the day spent strolling and shopping the mall – it won’t be at the expense of relinquishing the new pandemic-induced, creature-comfort conveniences to which we’ve become accustomed.

  • What ongoing role is the convenience playing in your communications?
  • Is it evolving as our situation is evolving?

Clarion call to optimize brand positioning and messaging now

Is your brand correctly positioned and messaging aligned to answer the pandemic induced sea change impacting food preferences and purchase decisions? If not, the fortunes of less responsive food businesses will inevitably be challenged in the year ahead.

The numbers tell the story

Root cause driving this condition is our escalating, culture-influencing battle with the pandemic. In the U.S. alone there are currently 24,800,000 cases of COVID 19 infection alongside a staggering 411,000 fatalities. This latter figure exceeds the casualties America endured in all of World War II. According to CNN, another 38,000 American lives were claimed by the pandemic in the first two weeks of 2021 alone. To provide optics on the scale of this, Johns Hopkins University reported 224,000 new domestic cases of COVID 19 in one day – Wednesday, January 13th.

  • With the arrival of approved vaccines will the tide turn soon? Not likely given the enormity of the vaccination challenge: In a Washington Post story on the vaccine rollout, Dr. Peter Hotez, professor of microbiology and molecular virology at Baylor College of Medicine said, “The nation must vaccinate an estimated three-fourths of Americans to interrupt coronavirus transmission and stop the spread. Reaching this target by September 1 will require us to fully immunize about 240 million Americans over the next eight months, or 1 million people every day from now until then.”

A tall order.

Never before have people been confronted so closely, continuously and repeatedly with an unseen and potentially lethal hazard that impacts how we live and behave.

Evolving health and wellness calculus

As cited in the Emerging Trends Report earlier this year, health and wellness concerns were already a priority for most consumers. Now, due to a daily confrontation with a global pandemic, the case for investing in one’s health and wellbeing has acquired significant relevance, gravitas and urgency.

  • This cultural development is reshuffling the deck of what matters as consumers look to take back control over their lives by managing what they buy and ingest with a specific goal in mind: to boost their immune system.

Immunity and safety are the primary concerns. Knowing this is the litmus test now applied to brands that fall into the “matters to me” column, are you confident your brand is correctly positioned with the right messaging strategy to address this compelling need?

Empathy could not be more important here. Reaching out with a human voice is how your brand places itself “in league” with the consumer’s needs and concerns. Your story should place consumers in the role of hero with your brand operating as guide, coach and expert in their wellness journey.

We unpack handwriting on the (relevant marketing) wall

If you’re like me, you’re probably exclaiming, “so now what?” Another day and another revelation of upheaval in an era of unpredictable, unsettling events that cause you to sleep with one eye open.

In an exceptional moment of corporate disclosure, Amazon announced that nearly 20,000 of their employees tested positive for Coronavirus just hours before the President and First Lady were diagnosed with the virus. No doubt the pandemic has reached into the lives of virtually everyone with unprecedented and transformational impacts that continue to reshape the way people think, shop and live.

Within the last few days major furloughs and layoffs have been announced simultaneously by a string of companies including Disney, Allstate, major airlines and others as business shortfalls consume cash reserves leading to headcount reductions.

  • Emergent has followed these developments closely. We are examining these events to translate them for useful guidance on what food, beverage and lifestyle brands should consider in business planning and how these issues impact marketing strategy.

Here we will unpack the most significant conditions. Focusing on what informs the immediate future for companies grappling with uncertainty via new revelations surrounding the economy, the disease, climate challenges and cultural disruption – all of which are inter-related.

The end of stimulus and the start of fiscal free-fall

In June media attention shifted to the looming end of Federal stimulus programs. Millions of people who were fortunate enough to qualify for meager state unemployment benefits, saw a life-preserving $600 a week added to their stipend payments. This action temporarily closed the financial gap for families who otherwise would be facing a cliff of cash shortages. That cliff has now arrived, impacting their ability to pay the bills, especially housing and food.

It is unclear if new stimulus support will return anytime soon due to the impasse between Congress and the Senate over the size and components of a national economic support package. Even with House passage of a $2.2 trillion measure, it’s unlikely it will go any further before the election, as both sides draw hard lines in the budget sand.

Thus, the income disparity between wealthier and middle-class families is widening and becoming more obvious (visible to all). Those less impacted by the recession continue to accumulate cash due to slowdowns in spending for commuting, business or vacation travel and discretionary activity in restaurant dining, sports and entertainment. Those directly affected by the economy slowdown experience layoffs, salary or hour reductions and wholesale permanent disintermediation of their jobs, while trying to manage life with quickly dwindling cash reserves.

Middle class spending is an engine that drives the U.S. economy so what’s happening here over time has domino impacts everywhere. It is in everyone’s best interests if stimulus support is turned on, and concerted efforts made to restore jobs or create new ones.

The number one impact of all of the above: stress and anxiety

Whether it’s class polarization, economic and employment uncertainty, concerns over social justice and all-too-apparent climate eruptions, plus a surging virus – all combine with the absence of control over one’s life and surroundings to manifest in a form of anxiousness. It is showing up everywhere in what people eat.

Legacy packaged food brand resurgence is evidence of filling a need for:

  • Comfort
  • Familiarity
  • Satisfying stress eating behaviors by reaching for higher fat and carb foods that somehow make people feel better. Apparently, a bag of chips is self-medicating. However, 27% of American adults are also reporting 5 or more pounds of weight gain since March – a troubling development especially as a good portion of the country experiences declining seasonal temperatures and more inactive time spent indoors.

As a sort of ‘flip side’ of this culinary coin, stress eating behaviors leading to high fat and carb foods, has its own polar opposite: the growing search for low sugar foods in an effort to exert more control over health and wellness at a time when investments in immune system integrity are a top priority for many people.

On the retail side, we’re witnessing a related swell in transactions and channel migration to hard discount. Not a surprise under these conditions. Again, we see the presence of an alter ego for stores in higher income zip codes. These retailers may see increasing opportunities for trial and volume growth of premium indulgent food and beverages. It’s just ‘nuts’ if you get my meaning.

Work-From-Home (WFM) not going anywhere

As we pour through reports on the status of WFM, we conclude this phenomenon isn’t likely to go away anytime soon. Now breakfast and lunch are prepared and consumed at home, adding to the need for guidance, kitchen counter coaching and convenient solutions. In many places the kids remain home for school as well, adding to the pressures in meal preparation. Can you help with emotional support, menu guidance and prep ideas?

Meal kits took a beating pre-COVID due mainly to cost and complexity. Now kits are returning as a viable way to vary menus and fulfill consumer interest in sophisticated (global) flavors and restless palate syndrome borne of at-home cooking boredom. Grocery retailers have an opportunity here to showcase kits in varying degrees of ‘do-it-for-you’ to meet the interests of the scratch cookers and those who are simply exhausted with all the constant chopping and slicing.

The Wheatley kitchen is a veritable round robin of cutting boards, knives, saute’ pans, bowls and leftover containers as two teenage daughters exert control over their food preferences, while the parents handle another portion of the chores. It’s an unending cycle of cooking and cleaning. I’ve not seen teenagers with such accomplished knife skills and baking expertise except on Chopped Kids.  

  • Snacking is now a 24/7 activity. The room for brands to play here is nearly infinite. The refueling is almost non-stop, some of it functional and some indulgent.

The opportunities for brands and retailers to become a partner with people in the kitchen has never been higher, yet so few are stepping-up to the plate. Perplexing.

E-commerce crazy

Time is all we have. How we spend it is all that matters. Why will e-commerce become such a dominant channel? Because it is built to give back time. The pandemic closes the door on casual browsing and spending extra quality time in brick and mortar retail. Shopping trips are fewer and purposeful, aimed at minimizing viral exposure.

Meantime the seamless digital shopping platforms people encounter are getting better and better. We’re now at a $70 billion run rate in e-commerce transactions. Experts in the field believe once you pass 50% of typical transactions in food or lifestyle, the tipping point may very well have been reached. Not there yet, but the leaps in digital purchasing this year are significant.

At this stage, as good online experiences and comfort level take over, people begin to appreciate the time they’ve been given back by avoiding the hassle of driving to and running the cart through stores.

That doesn’t mean retail disappears, far from it! It does mean that shopping experience and environment must be on a whole other level to romance and engage people in a sought-after and magnetic reason to be inside your doors. Disney does magic well, so should you.

Shopping for what?

According to IRI data through mid-August, the top five categories in retail sales volume are:

  1. Health care products
  2. Frozen meat/poultry/seafood
  3. Personal cleansing
  4. Other refrigerated
  5. Baking

Within the top 25 categories in sales growth, frozen and refrigerated holds 14 of them. Evidence that consumers care about preserving shelf life and guarding against food waste and scarcity, while the baking binge is no fluke. It is an effort to bring control back during an era when there is a predominant feeling of none.

Strategic direction: identify passionate cohorts, apply hyper relevance

If you can step back and see your marketing and communications strategies remains widely targeted at virtually every human on earth, now is the time to prune. The need for mattering has never been greater. Achieving that enviable position isn’t easy and requires significant focus and discipline.

Step One –

Identify the most committed and passionate consumers of your product or shopper groups in your stores. What do they care about, how do they live, what are the pain points they need to solve? Your goal is to become a refined and optimal solution to their problem. To get there you need to lean hard on the strategic thinkers and those with insight to consumer behaviors on your team. This is true customer-centric planning.

Step Two –

The goal of your marketing is hyper relevance to these consumers, to the point where they see a mirror of themselves in how the brand communicates and behaves. Your values and theirs become one. You step fully into higher purpose and deeper meaning with this cohort (there may be cohorts). Whatever end of the economic spectrum, you lean in to where they live and how they feel. You’re looking for common ground and ways to be of help. Your value proposition isn’t just the product or store. It’s how you tangibly work to improve their lives.

Step Three –

Your communications and content creation should be packed with advice, guidance and counsel. You walk away from the temptation to self-promote and instead focus on them and their stories. You enable social proof mechanisms and encourage people to share experiences because you know it’s credible proof of what you want them to believe. Your storytelling expands to address the higher purpose you’ve adopted and how you are helping improve the world around us. You now know it matters to consumers who expect this of you.

We understand that people are now literally consuming their identity. What they buy is a flag and mirror of their values, beliefs and what they hold to be important. Symbolism can be everywhere in every place that consumers encounter your brand and business. Are you deploying the markers and images they will recognize of lifestyle relevance?

The horizon: climate change

Looking ahead, what’s coming is a move to connect food and beverage choices with carbon footprint and impacts on climate change through contributing to the growth of greenhouse gases. There is genuine fear among people that food production is irrevocably linked to creating damage to the climate, leading to super storms, droughts and wildfires.

This issue is going to climb in visibility and importance. Brands have an opportunity to get in front of this concern and be part of the dialogue. The roots of this will inevitably go back to supply chain decisions and how foods are farmed or raised. To that end regenerative agriculture is going to rise as a priority and people will be looking for these practices to show up in an industrialized agribusiness that isn’t operating with these principles in mind.

The great promise of this type of farming is reversal of eroding soil conditions and processes that could help farmland become the world’s largest carbon sink. This is a horizon issue now but is rapidly building momentum.
